Pasta Fagioli 🍜
A hearty and traditional Italian 'pasta and beans' soup that is as comforting as it is nutritious.

Standard Preparation (From the Label)

You will need:

1 package Pasta Fagioli mix

2 tablespoons olive oil
-
1 chopped carrot
-
1 chopped celery stalk
-
1 cup chopped ham
-
2 (28 oz) cans chopped tomatoes

4 cups chicken stock or water
-
Parmesan cheese (optional garnish)
Cooking Instructions:

Remove the inner bags from the mix package. Rinse the beans thoroughly and set them aside.

In a large soup pot, sauté the chopped carrots, celery, and ham in the olive oil.

Add the tomatoes, chicken stock, rinsed beans, and the seasoning mix packet.

Bring the mixture to a boil, then partially cover the pot.

Reduce heat and simmer for 2 to 3 hours, or until the beans are tender.

Add the pasta and cook for an additional 5 to 7 minutes until the pasta is al dente.

Remove and discard the bay leaf before serving.

Garnish with Parmesan cheese if desired.
