You will need:

1 package Vegetarian Black Bean Chili mix

1 Tbsp olive oil

2 tsp salt (divided)

Water
Cooking Instructions:

Remove the inner packets from the package and rinse the beans thoroughly.

In a large soup pot, combine the beans, included seasonings, and 1 Tbsp of olive oil.

Cover the beans with 2 inches of water.

Bring to a boil, then reduce heat and simmer for about 2 hours until the beans are very soft. Add water as needed to keep beans from sticking; ensure some liquid remains when finished.

To cook the rice: Bring 3 cups of water and 1 tsp of salt to a boil. Add the rice, lower heat to low, cover, and steam for 20 minutes.

To serve: Place about half a cup of cooked rice in a bowl and top with the savory beans.
