Savor the deep, smoky flavors of a plant-based classic with our Vegetarian Black Bean Chili. This hearty blend combines protein-rich black beans with aromatic garlic, onion, and a touch of cayenne for a gentle heat. Served over a bed of fluffy white rice, it’s a wholesome, satisfying meal that brings the warmth of home-style cooking to your table.

You will need:

  • 1 package Vegetarian Black Bean Chili mix

  • 1 Tbsp olive oil

  • 2 tsp salt (divided)

  • Water

Cooking Instructions:

  1. Remove the inner packets from the package and rinse the beans thoroughly.

  2. In a large soup pot, combine the beans, included seasonings, and 1 Tbsp of olive oil.

  3. Cover the beans with 2 inches of water.

  4. Bring to a boil, then reduce heat and simmer for about 2 hours until the beans are very soft. Add water as needed to keep beans from sticking; ensure some liquid remains when finished.

  5. To cook the rice: Bring 3 cups of water and 1 tsp of salt to a boil. Add the rice, lower heat to low, cover, and steam for 20 minutes.

  6. To serve: Place about half a cup of cooked rice in a bowl and top with the savory beans.

Ingredients: Dried black beans, white rice, dried minced onion, dried minced garlic, oregano, salt, cayenne pepper.
