Experience a true Italian classic with our hearty Pasta Fagioli. This robust soup mix features a nourishing blend of northern, pinto, and red beans, seasoned with aromatic Mediterranean herbs like rosemary, basil, and oregano. With tender pasta added at the finish, it creates a thick, comforting meal that is perfect for feeding a hungry family on a chilly evening.

You will need:

  • 1 package Pasta Fagioli mix

  • 2 tablespoons olive oil

  • 1 chopped carrot

  • 1 chopped celery stalk

  • 1 cup chopped ham

  • 2 (28 oz) cans chopped tomatoes

  • 4 cups chicken stock or water

  • Parmesan cheese (optional garnish)

Cooking Instructions:

  1. Remove the inner bags from the mix package. Rinse the beans thoroughly and set them aside.

  2. In a large soup pot, sauté the chopped carrots, celery, and ham in the olive oil.

  3. Add the tomatoes, chicken stock, rinsed beans, and the seasoning mix packet.

  4. Bring the mixture to a boil, then partially cover the pot.

  5. Reduce heat and simmer for 2 to 3 hours, or until the beans are tender.

  6. Add the pasta and cook for an additional 5 to 7 minutes until the pasta is al dente.

  7. Remove and discard the bay leaf before serving.

  8. Garnish with Parmesan cheese if desired.

Put water in a large Soup pot and bring to a boil,add pasta soup mix and if desired chicken. Reduce heat, cover and simmer for 40 minutes or until lentils are tender, stir occasionally.
