This flavorful light spaghetti is a delightful and easy dish, perfect as a standalone meal or a versatile side. It's bursting with the aromatic essence of classic Italian herbs and a hint of spice, making it incredibly satisfying yet light. Feel free to add your favorite protein for a heartier meal.

Yields: servings 2-3 Prep time: 10 minutes Cook time: 20 minutes

Ingredients: Barilla spaghetti noodles, Dried- garlic, parsley,oregano,rosemary,basil,red pepper flakes, kosher salt

 

You will need:

    • 2/3 cup olive oil (extra virgin recommended for best results)
    • Optional: Grated Parmesan cheese for serving

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package directions until al dente. 
  2. Seperate herb mix from spaghetti package: Place in a 1 cup size bowl 
  3. Infuse the Oil: While the pasta is cooking, heat the olive oil in a small sauce pan over medium-low heat. 
  4. Add oil to the Aromatics: pour hot oil over herbs, stirring constantly, until the herbs are fragrant. This process helps to "bloom" the flavors of the dried herbs.
  5. Combine and Finish: Return the drained spaghetti to the pot  and pour  the infused oil and herbs over the top. Toss well to coat the pasta evenly.
  6. Serve: Divide the spaghetti among serving plates. Garnish with fresh  or grated Parmesan cheese on top.

Tips and Variations:

  • Add Protein: This dish pairs wonderfully with grilled chicken, sautéed shrimp, or even some crumbled Italian sausage. 
  • Vegetable Boost: Sauté some cherry tomatoes, spinach, or bell peppers for added nutrients and flavor.
