Add water: Place the rice in a pot or saucepan with the appropriate amount of water (usually a 1:1.5 ratio of rice to water).

Bring to a boil: Bring the water to a boil over high heat.

Simmer: Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes, or until all the water is absorbed.

Fluff: After resting, fluff the rice with a fork to separate the grains.

Curry rice, with its vibrant color and aromatic spices, is a fantastic starting point for many delicious meals! Here are some ideas for what you can make with it:

As a Base for Protein and Vegetables:

  • Simple Side Dish: Enjoy it as a flavorful side alongside grilled or roasted chicken, fish, shrimp, or tofu.
  • Curried Chicken and Rice: Top your curry rice with pieces of cooked chicken, either plain or also seasoned with curry powder for extra flavor. You can even make a creamy curry sauce to go over both.
  • Vegetable Curry Bowls: Spoon a hearty vegetable curry (with cauliflower, chickpeas, spinach, potatoes, etc.) over the curry rice for a satisfying and nutritious vegetarian or vegan meal.
  • Lentil Curry with Rice: A flavorful lentil curry pairs beautifully with the spiced rice, creating a complete and protein-rich dish.

  • Fried Eggs: For a quick and easy meal, top a bowl of curry rice with a fried egg. The runny yolk adds richness.

Incorporated into Dishes:

  • Curry Fried Rice: Take your fried rice up a notch by using curry rice as the base. Stir-fry it with vegetables, eggs, and your choice of protein (chicken, shrimp, tofu). Add extra curry powder or soy sauce to taste.
  • Curried Rice Salad: Once cooled, curry rice makes a wonderful base for a flavorful salad. Combine it with chopped vegetables like bell peppers, celery, red onion, raisins or dried apricots, nuts (like almonds or cashews), and a tangy dressing (yogurt-based or vinaigrette with extra curry powder).
  • Stuffed Peppers: Mix cooked curry rice with ground meat (beef, turkey, or lamb), vegetables, and perhaps some cheese, then use it to fill bell peppers before baking.
  • Soup Additive: Add leftover curry rice to thicken and flavor vegetable or chicken soups.

Creative Ideas:

  • Curry Rice Fritters or Patties: Mix cooled curry rice with a binder like egg and breadcrumbs, add some chopped vegetables or leftover cooked meat, form into patties, and pan-fry until golden brown.
  • Curry Rice Stuffed Tomatoes or Zucchini: Similar to stuffed peppers, use a mixture of curry rice, vegetables, and protein to fill hollowed-out tomatoes or zucchini before baking.

Tips for Success:

  • Consider the Curry Flavor: If your rice is heavily spiced, pair it with milder proteins or vegetables. If it's subtly flavored, you have more flexibility.
  • Texture Contrast: Think about adding ingredients with different textures, like crunchy vegetables or nuts, to complement the rice.
  • Sauces: A sauce or dressing can tie the whole dish together. Yogurt-based sauces, coconut milk-based curries, or simple vinaigrettes can work well.
  • Fresh Herbs: Garnish your curry rice dishes with fresh cilantro, parsley, or mint for added brightness.
